For those moments you suddenly want some morning tea, or you have visitors coming over and no time to make something more elaborate. This recipe is so quick and easy, and the slice is moist, sweet and very tasty!
In your blender (I use a vitamix, it is a heavy duty blender that blends everything and also grinds, emulsifies, you name it!) put 3 – 4 handfuls of organic dried apricots. Add 6 eggs, 1 1/2 Tbs coconut flour, 1 Tbs bicarb soda and 1 Tbs apple cider vinegar and blend until smooth. Stir in 2 handfuls of organic dried cranberries and scrape the mixture into a greased small square oven dish. Sprinkle some desiccated coconut over the top and bake in oven at 160C until browning on top and sides and the cake is bouncy. Take out to cool and once cooled slice (medium slices are best).
