Today started off with homegrown citrus (grapefruit and orange) juice blended with Surinam spinach. A little tangy and a little sweet, perfect start to today!
It was pancake day today, always worth cooking pancakes for 1 1/2 hours just to see the excited look in students’ eyes! The pancakes are served with homemade jam and marmalade, homemade yacon syrup, a pecan chocolate mousse and cream of course! I also stewed some strawberries this morning as I remembered one of the students telling me that she loves stewed fruit…
Morning tea was a gluten free vegan jaffa (chocolate orange) cake. Very yummy with our own cream!
For lunch we had locally caught fish today, with brown rice, roast sesame seed covered choko, roast pumpkin and pepita and a cucumber, olive and walnut salad with grapefruit dressing.
It is afternoon now, the students are busy with their design and there is a gluten free strawberry and chocolate cake in the oven to take to tonight’s Permaculture Noosa meeting. Every month this local permaculture group meets and it is always great when a course coincides with the meeting, so that the students can experience a permaculture group first hand and hopefully get inspired to set up their own group in their local area!
